Neither we are, but after this article, we are sure that this saying will enter your fund of &#8220;smart ones&#8221;.<\/em><\/p>\n<p>Today we will end the cycle on &#8220;Guardians of tradition, taste and smell of Vara\u017edin area&#8221; which we started with Vara\u017edin klipi\u010d, Zagorje \u0161truklji, Vabu\u010din, Trnove\u010dka makovnja\u010da and Vara\u017edin gingerbread which you can read more about <span style=\"color: #0000ff;\"><strong><a style=\"color: #0000ff;\" href=\"https:\/\/veemee.eu\/en\/2022\/03\/05\/guardians-of-tradition-taste-and-smell-of-varazdin-area\/\">here<\/a><\/strong><\/span>, and continued with \u0160emove\u010dka kele\u0161ica, Mlin\u010dani kola\u010d, Ku\u010danski ko\u0161\u010di\u010djak, Zagorje acacia honey and honey brandy that you have the opportunity to read about <a href=\"https:\/\/veemee.eu\/en\/2022\/04\/01\/traditional-snacks-of-the-varazdin-area-protected-from-oblivion\/\"><span style=\"color: #0000ff;\"><strong>here<\/strong><\/span><\/a>.<\/p>\n<p>We believe that you have all heard of gibanica, but have you heard of gibanik?<\/p>\n<p><strong>Vidove\u010dki gibanik<\/strong> is protected by the trademark of the Intellectual Property Office, and just one bite brings you back to your grandmother&#8217;s warm embrace and carefree childhood. There is no original recipe, and everyone associates their grandmother with the best and most delicious one. This is exactly what gives it a special charm as one of the most valuable culinary achievements derived from the Vara\u017edin region, more precisely Vidovec.<\/p>\n<p>However, the trademark document of the Intellectual Property Office brings the following recipe for the Vidovec gibanik:<\/p>\n<p><strong>dough:<\/strong><\/p>\n<ul>\n<li>buckwheat and wheat soft flour (in equal proportions) \/ 0.25kg<\/li>\n<li>a little milk<\/li>\n<li>a pinch of salt<\/li>\n<li>a tablespoon of homemade fat<\/li>\n<\/ul>\n<p><strong>stuffing:<\/strong><\/p>\n<ul>\n<li>1 pumpkin or white beet<\/li>\n<li>cow cheese \/ 0.5 kg<\/li>\n<li>sour cream \/ 1dcl<\/li>\n<li>2 tablespoons wheat grits<\/li>\n<li>2 eggs<\/li>\n<li>butter \/ 15dkg<\/li>\n<li>1 bun soaked in milk<\/li>\n<li>Salt<\/li>\n<li>1 teaspoon of sugar<\/li>\n<\/ul>\n<p>It is most delicious when all the ingredients are homemade, and here&#8217;s what it should look like:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-43996 size-full\" title=\"Vidove\u010dki gibanik\" src=\"https:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL.jpg\" alt=\"Vidove\u010dki gibanik\" width=\"900\" height=\"564\" srcset=\"http:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL.jpg 900w, http:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL-300x188.jpg 300w, http:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL-768x481.jpg 768w, http:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL-104x65.jpg 104w, http:\/\/veemee.eu\/wp-content\/uploads\/2022\/05\/15d43aef6c8a5134e1fc00a9c98b8ab0_XL-600x376.jpg 600w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p>After Vidove\u010dki gibanik, it&#8217;s time to add the missing puzzle to this Zagorje puzzle. The symbol of Hrvatsko zagorje, an autochthonous Croatian breed, without which no Christmas in the Vara\u017edin region can pass, is, you guessed it, the Zagorje turkey. It is prepared in various ways, but the most famous one is baked in the oven and served with <span style=\"color: #0000ff;\"><strong><a style=\"color: #0000ff;\" href=\"https:\/\/veemee.eu\/en\/2020\/09\/18\/the-best-zagorski-mlinci-protected-at-eu-level-are-from-kogutex\/\">Zagorje mlinci<\/a><\/strong><\/span> or potatoes.<\/p>\n<p>If you also serve <a href=\"https:\/\/veemee.eu\/en\/2021\/10\/19\/zdravlje-koje-tjera-suze-na-oci\/\">Ludbreg horseradish<\/a> and Vara\u017edin cabbage spiced with awarded Vara\u017edin <span style=\"color: #0000ff;\"><strong><a style=\"color: #0000ff;\" href=\"https:\/\/veemee.eu\/en\/2022\/02\/05\/zero-waste-family-farm-from-zagorje\/\">pumpkin oil<\/a><\/strong><\/span> in addition to mlinci, you will get a complete Zagorje meal, but also a real feast.<\/p>\n<p><strong>Vara\u017edin cabbage<\/strong> is not the &#8220;ordinary&#8221; cabbage we find in stores (most often imported from China). It is produced exclusively in the area within the administrative boundaries of Vara\u017edin County, it is adorned with a VeeMee QR code, and it has a sharp smell and a bitter-spicy taste.<\/p>\n<p>Fresh or cooked, pickled or spiced, it is an ideal side dish at any time of the year.
