Šimić Distillery is a family business founded in 1995. Located in the heart of Slavonia, the Šimić family maintains the tradition of producing quality fruit brandy. It covers an area of ​​17 hectares, of which 7 hectares are under pear orchards, 7 hectares of plums, 3 hectares of an accumulation lake and a distillery for processing fruit into fruit distillate.

The main activity of the craft is the production of fruit and 100% natural fruit brandies and a tourist offer with the characteristics of experiential tourism and ethnological peculiarities.

A dream that has become a reality…

The best varieties of Viljamovka pear were poured into brandy blessed with the intoxicating honey aroma of fruit, the softness of the most refined “spirits”, while those significant 38 volumes per cent of alcohol blended perfectly into a harmonious whole. Brandy is – in short – which in terms of harmony, softness and richness of aromatic profile is valued on the domestic market. The palette of brandies was complemented by Šljivovica, an extremely harmonious brandy in which the fruit can be felt in the nose and on the palate, as well as Jabukovača.

Great drinks, therefore, have a story, stimulate emotions, passion and aesthetic values ​​but the ultimate achievements are in constant re-examination.

“Water of Life”

The word brandy is of Arabic origin and comes from the word “al-rak”, which in free translation means sweat. The word reached our region with the Turks in the 14th and 15th centuries. Knowledge of the distillation process spread rapidly throughout Europe, and the production of distilled alcoholic beverages called “water of life” began in many countries.

Pear brandy (Viljamovka)

Pear brandy (Viljamovka) is the most appreciated among brandies, with a recognizable calm, noble taste, very elegant. Among the hundreds of varieties of pears, it is produced exclusively from the Viljamovka pear. Uniquely juicy aroma with a pleasant fruity taste. Viljamovka Šimić provides a unique fullness of taste and aroma, and the drinkability of this drink is the result of a carefully managed production process. Produced from organic fruit growing, it provides a unique fullness of taste and aroma, and the drinkability of this drink is the result of a carefully managed production process. Obtained from our own plantation, organic fruit growing is characterized by the fact that the production itself is under the guidance of the profession from the first day of planting and is produced on new distillation boilers with the possibility of separating fractions. Fermentation takes place in anaerobic tanks with the possibility of cooling regulation.

Careful distillation preserves the characteristic taste and intense and noble aroma of Viljamovka. Our brandy is made from 100% fruit.

Plum brandy

Šimić Šljivovica is an excellent example of a harmonious combination of plum and oak that gives depth and richness to taste and aroma. With a recognizable perfectly balanced and intense fruity taste, Šimić plum brandy offers true enjoyment to fans of top traditional plum brandy.

Šimić Šljivovica was obtained by double distillation of carefully selected plum varieties. Selecting only the best ripe fruits and removing the stones before fermentation makes Šimić Šljivovica have a unique taste and aroma. Its colour, special aroma and taste enriched with gentle tones of vanilla originate from the oak in which it is aged. The full, fresh, developed scent reveals the splendour of the plums from which it is made.

It tastes full, clean, harmonious and rounded. Plums obtained from our own organic orchard, which covers 7 ha, are used. It is recommended to serve this brandy at room temperature, as an aperitif or digestive. It goes well with salty appetizers, traditional and stronger-tasting dishes, more mature cheeses or at the end of a meal, with a chocolate cake.

Apple brandy (Jabukovača)

Apple brandy is produced by carefully selected technology of fermentation and distillation of ripe apple fruits. It has a pleasant, very fine, slightly developed aroma of fresh fruit in which the smell of apples is slightly felt. Harmonious, rounded and attractive taste is characteristic of this beautiful drink.

Brandy production

The technological process of brandy production consists of these stages:

Stage 1: Fruit

For the production of top quality brandy, it is necessary to take only ripe, undamaged and well-preserved fruit. Šimić Distillery specializes in growing organic pears and plums.

Phase 2: Grinding

The fruit is processed by a machine – grinding, chopping or crushing the fruit.

Stage 3: Fermentation

The crushed fruit pulp is then fermented in tanks, at a controlled temperature in a cold room for certain periods of time.

Stage 4: Distillation

Technological operation of extracting alcohol from a fermented mixture – popular baking. on new distillation boilers with the possibility of separation of fractions. Fermentation takes place in anaerobic tanks with the possibility of cooling regulation.

Stage 5: Aging

During this period, the taste, aroma and color of a certain type of brandy develop.
